I have to thank Jeremy N. and Joshua C. (yet again!) for the 411 on this great place.

Mitch's Fish Market is TINY....there's only 3 tables and a counter that seats 5 and the decor basically consisted of posters of freshly caught marlins and pictures of customers haphazardly posted on the walls.

It doesn't help that his restaurant is tucked away in a remote part of an industrial zone either.

But despite these obstacles Mitch has managed to attract people from all over the island because his seafood is so FRESH.

There was little doubt in my mind that the Uni, Oysters, Toro, Mirugai, Hamachi, etc. that I ate was flown/shipped in that very morning.

My favorite dish was the Spiny Lobster Sashimi which was killed just moments before it reached our counter. Of course the lobster was delicious, but I preferred John Dominis' presentation of leaving the moving head and torso still attached to the tail and the meat...I guess I'm a bit of a sadist, but having the poor critter watch me eat its flesh doesn't bother me very much...but I digress. The leftover shell and various body parts were later made into Lobster soup. YUM.

Interesting side note: My wife informed me that in Japan, as part of a longstanding tradition, sushi chefs are allowed to accept alcoholic drinks from customers sitting at the counter who want to show their appreciation for their work. As a consequence many Japanese sushi chefs drink on the job. Anyway, it seemed that both our Japanese born sushi makers carried this habit to Hawaii as they were both sneaking sips of sake and beer. We didn't mind since it appeared to keep their spirits high enough to give us a freebie =)

Interesting dish I've never tried prior to last night:
Yarika, otherwise known as Arrow Squid. The chef prepared it by searing the squid with a blow torch for about 10 seconds. This simple act grilled the exterior to just the right amount of crispiness while leaving the inside still moist and tender.

Be prepared to drop some dollars though...it ain't cheap, especially if you order the Lobster Sashimi. BUT, since it's BYOB, you can save some money here if you're a heavy drinker.

Anyways, yeah, Mitch's is small, but just as in sex, it's not always the size that matters but knowing what do with it that does. ;-)
